brewing guidelines

Brewing coffee is as much an art as it is a science.

Here are a few fundamentals of coffee brewing to bring out the best in our coffees.

Water

Coffee is 98% water so using the best water is critical for the best tasting coffee. Using filtered water that is free of impurities and off-tastes will help your coffee taste the best.

Water should be heated to 195º – 205º F (90.5º – 96.1º C). Any temperatures beneath this range will not allow the coffee to extract completely.

Grind

Grind size is influenced by the brewing method. As a general rule, the shorter the brew time, the finer your grounds will need to be.

Extra Fine: Turkish coffee

Fine: Espresso, moka pot

Medium-fine: Aeropress

Medium: Pour over, siphon

Medium-Coarse: Chemex, drip coffee

Coarse: Coffee press, cold brew

Proportion

Exact ratios are another factor that is determined by brew method and individual taste preferences.

For best results and a flavorful cup, we recommend 2 tablespoons of coffee for every 6 fl oz of water (10g of coffee for every 180 mL of water).

freshness

Coffee loses its aromatic properties the longer it is exposed to oxygen, light, moisture, and heat. To keep coffee fresh longer, it should be kept in an airtight, opaque container at room temperature. Fresh coffee should not be refrigerated.

Fresh coffee should be used within one week.
